Spaghetti macaroni is one of my favorite comfort food. The macaroni egg pasta was my Mother’s original recipe. She usually make for us whenever we are complete or when needed a Mother’s hug and touch. So I decided to make my own to comfort me right now. Further, I made a twist by adding my favorite longganisa balls made from PRIMADUCK LONGGANISA.
Ingredients:
For the Longganis Balls:
1 pack Smoked Longganisa(PRIMADUCK)
3 pcs. Skinless Longganisa(PRIMADUCK products)
Small carrots(chopped into dice)
Flour
Salt & Pepper to taste
PRIMADUCK LONGGANISA are farm raised in Capas, Tarlac. Further, duck went under thorough quality control.

Remove longganisa from it’s casing. Add flour, eggs, chopped carrots then salt & pepper according to taste.
Once mixture is combined, form into medium size balls. Set aside. In a skillet, deep fry the balls until golden brown. Let it cool.
Ingredients for Egg Macaroni Pasta:
Macaroni pasta
2 eggs
Onion & garlic( chopped into dice)
Spaghetti sauce
Ketchup (Tomate sauce or tomato paste if available)
Italian seasoning
Salt & Pepper to taste
2 tbps. Cornstarch(thickner)
In a skillet saute onion and garlic until translucent. Add spaghetti sauce & ketchup. Let it simmer for a minutes.
On the other hand, cook the macaroni pasta according to package instruction. Set aside the pasta water.
Once sauce reaches to boiling point drop eggs the stir until combined. Add italian seasoning, salt & pepper to according to taste. Simmer for a few minutes then stir in the pasta.
You may also put in the longganisa balls into pasta sauce for added flavor. Serve hot with grated cheese.
