Bibingka is one of my favorite especially during Christmas season. So I decided to my own version to satisfy my cravings.
2 1/2 cups APF
1 cup Glutinuous Rice Flour
2 tsp. Baking powder
1 can evaporated milk
2 tsp. Vanilla extract
Banana leaves for lining the pan
Prepare banana leaves into a desired pan. I use 6 inch round baking pan. You can also use Mamon molders.
Combine all the ingredients. Mix until all combined.
Pour the mixture into a pan then topped with salted eggs or grated cheese.
Let it cool for a few minutes. Enjoy with coffee or tea!
